Tamarind trees are grown in abundant in the wild in the state of Odisha. The extract of the fruit which is tangy with a sweet and sour note and is extensively used in various cuisines, sauces and juices. The harvest season is between February to May.
The Fruit: The fruit is shaken off the tree with long sticks and collected. The fruits are de-shelled and the pulp is packed in HDPE (Food Grade) plastic bags and sent to factory for processing.
